After several tries that were often “too dry” for my omnivore’s taste, I managed to come up with this one! Several ingredients can be replaced if you don’t have them. Also, I don’t know a lot about this but I believe it is totally gluten free. 🙂

Indian style red kuri squash

I loooove squashes, and last Friday the market happened to still have some red kuri squashes, even in this season! So I couldn’t resist to take one and use it for the first recipe of this blog. I decided to try cooking it differently than the usual pumpkin soups, for a change.
